Red Rice

RED RICE


4 cups rice
1/2 large onion chopped
6 to 8 slices bacon that has been minced
1 small can peas or frozen peas (defrost before adding)
Achote powder
1 tablespoon vegetable oil
Salt and pepper to taste
Butter
Optional: switch water with chicken stock

  1. Fry bacon, drain and place in separate bowl
  2. Wash rice, add oil and achote powder. Mix well
  3. Add water or Chicken stock (additional flavor)
  4. Add onions, peas, and bacon to the mix
  5. Salt and pepper to taste
  6. Place in rice cooker
  7. Once rice is cooked – Add 1 tablespoon butter, mix rice and let sit
  8. Enjoy

I love the simplicity of the recipe, you do a little prep work and the rice cooker takes care of the rest.

How much water is needed for this recipe to cook the rice?

Sorry Francine. I didn't think about putting the amount of water. I normally use the first line on my index finger to gauge the water amount but you can use 1 cup water for each cup of rice.

1 cup uncooked rice = 1 cup of water
