Corn Soup

1 whole chicken cut into bite sized pieces
1 onion - julienne
2 cloves garlic - rough chop
2 cups coconut milk - unsweetened
2 cans of sweet corn
1 can cream of corn
1 tablespoon vegetable oil

Saute onions and garlic in vegetable oil. Add bite sized pieces of chicken and cook till brown. Add coconut milk and corn into pot and allow liquid to come to a boil, lower heat to a simmer and allow chicken to cook through.
