1 Octopus cut into bite size pieces
1 small onion
2 cups coconut milk (unsweetened if from the can)
1 cup water
4 cherry tomatos
Salt and pepper to taste
Place all ingredients except coconut milk into the pot and bring to a slow simmer for 10-15 minutes or until the octopus is tender. Add coconut milk and let simmer for another 10 minutes.
