Kadun Pika

Uncle Bo’s Quick Kadon Pika

1 Bag of Chicken wings
1 Onion – julienne
6 - 7 cloves of Garlic
1 cup of soy sauce
½ cup vinegar
8 tablespoons of black pepper
5 – 6 Donne’
5 tablespoons vegetable oil

Quick and Easy Directions:

Place all ingredients in a pot, cook on medium-high heat for 35-45 minutes. If you want less liquid leave the cover off. If you want it soupy then leave the cover on.

Here's Uncle Ray's version:

1½ to 2 lbs chiken wings (or whole chicken cut up)
5-6 tbs vegetable oil
1 Large Onion – sliced
10 minced cloves of Garlic
1½ tbs of sweet paprika
or take 30-40 achote seeds put into a 1/8 cup of water, stain and reserve the liquid (sweet paprika is better)

3-4 bay leaves

4 oz can of sliced button mushrooms
(optional)

1 cup water

2 tbs soy sauce
½ cup vinegar
20 whole black pepper corns

3 Donne’

Easy Directions:

1. Heat pot on medium-high and added vegatable oil.
2. Saute chicken, half of the onions, garlic, salt and optional button mushrooms until chicken is no longer pink.
3. Add paprika and bay leaves and continue to saute for about 2-3 minutes (if using achote add the liquid in the next step.)
4. Add (achote liquid), soy sauce and water and bring to a boil.
5. Add vinegar, whole black pepper corns and water, cover pot with lid and reduce heat to simmer for about 30-40 mins.

Stir once in awhile to prevent sticking and check liquid level; add water if a liquid evaporates to much; add more salt to taste.

5. Add remaining onions and Donne and continue to simmer for 15 minutes or until chicken is soft but not falling apart.

The trick is to make sure that the liquid level is a little thick and not too soupy.

When finished the chicken and onion should be very tender and the sauce should be a little thick

Serve with Steamed White Rice and Aloha Shoyu or Kikoman Shoyu.

Done.

Forgot to mention that I tried the recipe out and like how the paprika and bay leaf adds additional flavor. Talk about taking chicken adobo to the next level. Si Yuus Maase and Mahalo for the Broke da Mout Spicy Chicken Abodo recipe.

just wanted to add a twist to your kadun pika

i substitute vinegar for coconut milk- 1 part soy sauce and 1 part coconut milk- simmer until the coconut milk reduces- and i also cheat by adding donne dinanchi....

Why so negative bro? "sounds like chicken adobo to me" everyone has their own variation of this Guamanian dish. Okay, it reads like chicken adobo; but it's not dude, it's Kadun Pika! your very own.
