Fish Sarciado
There are so little things that make me happy and this recipe is one of them. Now I do admit that I am guilty of stating that every recipe is a favorite of mine but it's true.
Every recipe, even if for the same dish is different therefore making the dish in itself different. Too much? I know but that's my story and I'm sticking with it. Enjoy the recipe...
2-4 lbs of fish (your choice whether reef, blue water, filet or whole, I prefer reef and whole)
Salt and Pepper to taste
2 tablespoons lemon juice
Cornstarch
Vegetable Oil for frying
1 Onion diced
Green Onions - cut into 1/2 inch long strips
1 cup of quartered cherry tomatoes
2 cloves garlic diced
Vegetable Oil to saute vegetables
Fish Prep: Clean Fish if whole and you have never ever cleaned fish before follow the tips from this page. The directions are pretty easy so you should be fine. I would do the following remove scales. Gut, remove entrails and gills. Rinse the inside and outside of the fish thoroughly. Slit the fish on each side. Easy. Right?
Rub fish with salt, pepper and lemon juice ( The slits you made earlier not only help the fish to fry faster but also allows you to season the fish better.) Let sit for 5-10 minutes. Dust with cornstarch and deep fry till golden brown.
Remove fish from oil and place on separate dish on top of paper towels.
In a skillet, saute onions, garlic, green onions. Lower heat, add tomatoes and continue to cook till a sauce like consistency develops. Remove from heat.
Remove paper towels from platter with fried fish and pour vegetables onto the fried fish.
For an easy dinner serve with hot white rice and finadene or you can go for broke and go with red rice, cucumber kimchi and of course, finadene

Chamorro Recipes - Cucumber Kimchi
4 -6 cucumbers
1 package takuwan
1/2 cup vinegar
1/2 cup water
2-3 donne
1 bottle kimchi base
optional: 1/2 teaspoon Ajinomoto
Peel cucumbers, remove seeds and cut into 3 inch long slices. Place into bowl
Cut Daigo into 3 inch long slices and place into bowl with cucumbers
Add vinegar, water, donne, kimchi base, and ajinomoto. Let it sit for an hour so the ingredients can soak together, then enjoy.
Add as much or as little vinegar/kimchi base/donne as you want. I like the tart that the vinegar gives off so I always make my cucumber kimchi extra sour. You know, so sour that when you open the Tupperware your mouth automatically starts to water.

Banana Lumpia
5 ripe bananas, sliced lengthwise in half (be sure it can fit into lumpia wrapper)
Sugar
10 Lumpia Wrappers
Vegetable Oil for frying
Take banana slices and completely coat in sugar. Place bananas in wrappers closing in envelope fashion and sealing ends with a water. Heat oil in a small pot to deep fry the lumpia. Fry in hot oil until golden brown.

1/2 pound each, ground beef, pork, chicken and shrimp (raw)
1, 8 ounce can water chestnuts drained and finely chopped
2 carrots finely chopped
1 small bunch green onions, finely chopped (or one med. onion, chopped finely)
1 pound bean sprouts
1/2 pound finely shredded cabbage
2 small cloves, finely minced garlic
salt and pepper to taste optional ingredients. (Finely chopped) celery, bell peppers, green beansLUMPIA WRAPPERS or won ton wrappers
1. With a small amount of vegetable oil, sauté beef, port, chicken and shrimp with garlic and onions till cooked or tender, then add carrots, celery and other optional ingredients and cook till tender, adding salt and pepper to taste...
2. Put a tablespoon full of the sautéed ingredients in the middle of a wrapper and wrap, anchoring with a flour paste. (You should cover the wrapped lumpia with a damp dishtowel as the wrappers can harden and crack, making it hard to fry)
3. Fry the lumpia until golden brown. Do not cover, as it will make the lumpia soggy.
If you're around an Asian store, BANANA CATSUP is a great dipping sauce, otherwise, I like to make a vinegar, minced garlic, ground pepper, slight bit of vegetable oil sauce to dip in, others just like to dip it in soy sauce mixed with a little vinegar.
