As I stood there there I began to remember all the creative ways we found to grill. So here's the question, 'How do you BBQ?'

I've been throwing around the idea of a $50 giveaway for a 'How Do You BBQ Challenge.' Now please do remember that this is just an idea and has yet to be finalized so don't get to excited.

Rules will be simple, a recipe of your BBQ specialty and a picture of yourself, family or friends. Please keep the pictures tasteful as the recipe and pictures will be posted to the Chamorro Recipes blog but feel free to be creative.

BBQ's on the beach, in the snow, at work outside of course or inside, I know I'm going to regret this but be as creative as you like.

We'll evaluate the recipe and pic, and the winner gets $50. I know 'Lanya Che'lu $50 only?! Hey its a tough economy out there and it is $50 for a recipe you already have with pictures you already took.

Just and idea, let me know what you think, should I receive a decent response then we'll get things going.

Si Pete--

Chamorro Recipes on the Run: Chicken Kelaguen

Chamorro Recipes on the Run: Chicken Kelaguen

I know the sticklers to traditional Chamorro cooking are going to tag me on this but hey is anything traditional anymore?

Use this chicken kelaguen recipe and stuff it into a pita bread to substitute titiyas. This one has to be the one that strikes my taste buds the most. Enjoy!

Some people ask me, "What's the ratio of eggs to potatoes?" Not sure I normally use one egg to every potato (10 potatoes, 10 eggs), but hey that's just me. Remember as you increase the amount of potatoes you will also have to increase the amount of other ingredients listed.

On another note, I prefer using the canned or bottled variety when it comes to pimentos, olives and relish (POR). Why? Simple my friend, convenience! Simple, Easy and already diced.

Not a fan of one or all of the additions (POR), then don't include it or them. No big deal!

Next item on the list, salt. Now I've heard many say "You put salt in your potato salad!" If you don't like salt in your potato salad. Don't put salt. Easy! But salt makes it so much better.

Directions:

Cut potatoes and eggs into cubes. Place into large container add pimentos, olives and relish. Mix well. Add salt and black pepper to taste. Add mayo. Mix one last time so that the mayo is properly distributed. I caution you not to mix the potatoes too much or else you end up mashing them.

That's it! I hope you enjoy the recipe!

If you'd like, you can save one or two of the yolk portions from the already hard boiled eggs and grate them over the potato salad. (Smooth the surface of the potato salad out first before you begin grating).

Fish Sarciado

Fish Sarciado

There are so little things that make me happy and this recipe is one of them. Now I do admit that I am guilty of stating that every recipe is a favorite of mine but it's true.

Every recipe, even if for the same dish is different therefore making the dish in itself different. Too much? I know but that's my story and I'm sticking with it. Enjoy the recipe...

2-4 lbs of fish (your choice whether reef, blue water, filet or whole, I prefer reef and whole)
Salt and Pepper to taste
2 tablespoons lemon juice
Cornstarch
Vegetable Oil for frying

1 Onion diced
Green Onions - cut into 1/2 inch long strips
1 cup of quartered cherry tomatoes
2 cloves garlic diced
Vegetable Oil to saute vegetables

Fish Prep: Clean Fish if whole and you have never ever cleaned fish before follow the tips from this page. The directions are pretty easy so you should be fine. I would do the following remove scales. Gut, remove entrails and gills. Rinse the inside and outside of the fish thoroughly. Slit the fish on each side. Easy. Right?

Rub fish with salt, pepper and lemon juice ( The slits you made earlier not only help the fish to fry faster but also allows you to season the fish better.) Let sit for 5-10 minutes. Dust with cornstarch and deep fry till golden brown.

Remove fish from oil and place on separate dish on top of paper towels.

In a skillet, saute onions, garlic, green onions. Lower heat, add tomatoes and continue to cook till a sauce like consistency develops. Remove from heat.

Remove paper towels from platter with fried fish and pour vegetables onto the fried fish.

For an easy dinner serve with hot white rice and finadene or you can go for broke and go with red rice, cucumber kimchi and of course, finadene

King Crab with Oyster Sauce

King Crab with Oyster Sauce

King Crab Legs
1/2 onion thinly sliced
1 can of coconut milk or carnation milk
3 tablespoons oyster sauce
Black Pepper
1 tablespoon of butter

Use butter to saute onions in a pot. This recipe has always been a favorite of mine and is really quite simple to make.

It's not Chamorro at all but who cares it tastes great:

2-4 lbs of frozen or fresh shrimp
1 whole onion
2-4 cloves of garlic
2 tables of grated ginger
1-2 tablespoons black bean paste (go easy on the paste it may be strong, depending on the brand, I normally use 1 tblspn)
2 tablespoons butter
Salt and Black Pepper to taste

Saute onions, garlic and ginger in butter. Add shrimp and black bean paste. Cook shrimp through. Salt and pepper to taste.

Tip: Watch the shrimp, pay attention to its color and tail, it'll turn a nice pink and the tail will start to curl in and form a "C" shape. Don't over cook "@" unless you like your shrimp tough and rubbery. Serve with hot white rice and enjoy.

Chamorro Links

Feety-feet by Mona
Go jump off a cliff with Angelo
Dancing Cowboy with EJ
Aloha Ladies with Brad Boy
Trench turns 19 months old

Chamorro Recipes - Cucumber Kimchi

Chamorro Recipes - Cucumber Kimchi

4 -6 cucumbers
1 package takuwan
1/2 cup vinegar
1/2 cup water
2-3 donne
1 bottle kimchi base
optional: 1/2 teaspoon Ajinomoto

Peel cucumbers, remove seeds and cut into 3 inch long slices. My uncle requested the following ingredients and threw the ribs in the mixture.

I got the fire for the bbq started, made rice, and brought out a couple of beers from the icebox. (Some argue that I did that in the wrong order: it should've been Beer, fire, rice. They're probably right.)

Since ribs cook relatively quick we didn't have to worry about the fire being too high. The ribs were a golden color, with the pork skin crispy on the outside and moist in the inside, it also had a light sweet yet savory taste from the soy and sugar mixture. Excellent marinade.
